Congrats on the new kayaks. With high back seats, I would recommend an Astral V-Eight. It has a high back that works well for me with the seat back on my Hobie Outback

Is an inflatable jacket allowed where you are? No back on most, just a couple of straps.

Great looking kayaks! I have a Tarpon 100 that I haven't had out of the water yet to compliment my Old Town Predator MX. Best wishes on the water!

Yes, and while I have considered using an inflatable because of comfort I haven't gotten around to trying one. Certainly a viable option and the best PFD is the one that you will actually use.

I've been looking around and I think I'm leaning towards the NRS Ninja for it's compact size. For now we are rocking the standard orange boat vest.
I did pick up a couple of rod holders from RailBlaza:

NRS Chinook is super comfortable and has a high back that won’t interfere with the seat at all. Good front storage for tools as well.
A fish in the hand is worth two in the brush
