What's the fastest gear set I can put in a t3? And where can I buy them?

I'd contact the tackle trap. They can get you hooked up with daiwa parts.

Fastest at present is 8.6:1
Only available from Daiwa Japan(T3 Air).The main gear is the lighter hybrid model,it will reduce weight substantially.You will need to order the main gear and the pinion gear.Only draw back is the cost
