theyre good, we caught them by the coolerfull this past yearm in the delaware bay out of slaughter beach, and made tons of 'croaker cakes' with them. fight like demons for their size too.promax wrote:Croaker
i have to say though that the best eating fish is either black sea bass, fluke, or shark. i think though, my preference is fluke.

Mahi Mahi (Dolphin to us Atlantic old timers)
I live land-locked now and was recently astounded to find a tremendous deal at the supermarket on Mahi Mahi fillets. I bought all they had and now we're eating Mahi Mahi every other day until it runs out.
As for preparation I grew up preferring fried fish, but don't fry it anymore. Instead I broil it with the following technique: Melt butter then add some garlic powder and mix it into the butter. Brush both sides of the fillet with the butter. Broil it on one side until the fish begins to brown at the edges. Turn it over and do the same thing. Serve with dill-flavored tartar sauce. This works for fillets up to about an inch thick.

Monk fish
Nasty looking (looks like snot) but very tasty Used to be known as poor mans lobster but its priced about the same now...at least in my area and the obx.
I worked at a supermarket in the obx for a few years and we would um...sample for errr qc reasons just about everthing in the seafood department ( shrimp required several and repeated testing) a true test of fish flavor is to steam it with little or no seasoning.....done this way grouper was hard to beat with monk only better when prepared with a garlic butter marinaid.
mahi mahi with pinapple is freaking mouth watering also.
