Now that is impressive on a Weber! I know nothing about this "snake method" of which you write, but I'd be over for dinner in a hurry if that was on the menu and you weren't 2K+ miles away, very nice work, it looks delicious!

I do the same. On a sub 30 inch Weber I successfully pulled off a 15lb Pork Shoulder and a 12lb Brisket at the same time. It can be done! Was about 18hrs cook time for the beef, the pork took about 15, held in a faux cambro until butter.

The snake is basically arranging the briquettes in a "snake" shaped pattern and lighting only the first one in line ... the idea is as the lit one burns itself out the next one is lit and so on. Very nice!
So when you use the snake method how long did it take for the final coals in the snake pattern to catch?
Also what was your final time on the Weber?
I want to try this in the fall when the temps cool down and football season is rolling!

That looks great! I have a little Weber bullet and do a lot of pork and chicken, but brisket intimidates the hell out of me. Question, does using "the snake" damage the finish on the outside of the grill? I tried a similar idea in a cheaper grill and the heat directly on the side walls bubbled the paint on the outside.

1. Those are intertwined briquets and chips?
2. Can you use natural lump charcoal or does it have to be briquets?

Lump generally burns hotter and faster, briquettes a tad cooler and longer. Lump is irregular in shape so burn rates will not be consistent.
I prefer briquettes for low-n-slow cooks and lump for things like steak where I want to cook quickly at high temps. You may experience unwanted temperature fluctuations with lump if trying to do a slow cook.
Both will work, just be aware of this.

I smoked for about ten hours. still had a good portion of the snake left. you can do this many ways with the Weber. The way I showed was from YouTube. It worked well!!

You can definitely smoke longer with one large bag of bricks. I soak chips overnight in vinegar and apple juice and to tell you what to really slow it down and keep it low like 215 I threw apple slices every so often as well to keep it real low otherwise it'll jump up on you as stated earlier in the thread. Surprising he can come from that method. I went old school and just had a big long thermometer that I stuck through the vent on top and pointed it towards the hottest lit part of the coals. That worked pretty well I would have liked to smoke it for probably 2 more hours though the man that made awesome sandwiches and the bark was delicious. Next is a ridiculous amount of ribs. I only say that cuz generally I can put a rack down myself

Oh also don't forget the bottle of your choice of Spritz to mist the damn thing too! I use the same apple cider vinegar with apple juice. Hook it up gents since I found out this I'll be smoking quite often. And I won't bother with a smoker now, I was toying with the idea and the wifey was thinking about getting me one. Now I say no, send that money to fishing gear
